Ymir Flesh is bought from the wandering trader Haldor for 120 Coins, not found in the wild. It is required to craft Frostner and the Iron Sledge, two strong mid-game weapons. Finding Haldor in the Black Forest is the gate on both, so explore until his bag icon appears on your map.
